Meet the New Owners of Upstream Fish Company
Upstream Fish Company is entering an exciting new chapter under the leadership of Chef Matthew Smith and Justin Bohning—two individuals who share a deep passion for exceptional seafood and high-quality dining.
Chef Matthew Smith brings more than 25 years of culinary expertise to Upstream. A graduate of the Culinary Arts Institute in Denver, he has built his career around fresh seafood, creative flavor profiles, and elevated dining experiences. Matt spent 15 years owning and operating a successful Sushi and Seafood House in Colorado and has been involved in opening over a dozen restaurants across Colorado and Missouri. Through a long-standing partnership with a Hawaiian fish market, he has direct access to some of the freshest seafood available—quality he’s proud to bring directly to Upstream Fish Company.
Justin Bohning, a Greenview local, has worked alongside Matt at Riverbird Winery and shares his dedication to culinary excellence. “I am ready for this next chapter in my career. I grew up at the lake, so this is a full-circle moment for me and my kids!” Justin’s love for the lake community and commitment to great food make him the perfect partner in guiding Upstream’s evolution.
Together, Matt and Justin are excited to build on Upstream’s five-year reputation for premium seafood by introducing grab-and-go sushi, meal-prepped dishes, and unique Asian-inspired market items you won’t find anywhere else at the lake. Their shared vision brings new flavors, fresh ideas, and an elevated experience to the LOZ community as Upstream continues to grow.

Located in the heart of town, we are dedicated to offering an unmatched variety of high-quality fish and shellfish. If you are a rewards member they send you text and emails with specials and deals and they let you know what they have. They have shipments in several times a week, so the food is always fresh! Today I bought two types of oysters, big eyed tuna, and scallops… The grade is so high that you can eat it like sushi. The oysters were phenomenal! The Bluepoint oysters even had a couple of little pea crab inside, And our Frenchie T-bone loved them very much!!! Would 10 out of 10 recommend upstream fish!!! Again and again!!!
